Description

Ingredients

▢ 1 lb ground turkey

▢ 2 cups broccoli florets

▢ 1 cup carrots, julienned or thinly sliced

▢ 1 bell pepper (red or orange), sliced

▢ 1 cup snow peas

▢ 2 cloves garlic, minced

▢ 1 teaspoon fresh ginger, grated

▢ 1/3 cup low-sodium soy sauce

▢ 3 tablespoons honey

▢ 1 tablespoon rice vinegar

▢ 1 teaspoon sesame oil

▢ 1 tablespoon cornstarch

▢ 1/4 cup water

▢ Pinch of cayenne pepper (optional)

▢ 1 tablespoon sesame seeds, for garnish

▢ 2 green onions, thinly sliced

▢ Cooked rice or quinoa, for serving


Instructions

1. In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, cornstarch, water, and cayenne pepper. Set aside.

2. Heat a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spatula, until browned (5–7 minutes).

3. Add garlic and ginger and sauté for about 30 seconds until fragrant.

4. Stir in broccoli, carrots, and bell pepper. Cook for 2–3 minutes until starting to soften.

5. Add snow peas and stir-fry for another minute.

6. Pour the prepared teriyaki sauce over the stir-fry and cook for 1–2 minutes, stirring, until the sauce thickens.

7. Serve over rice or quinoa and garnish with sesame seeds and green onions.

Notes

Make it spicier by increasing the cayenne or adding chili garlic sauce.

You can swap the ground turkey with ground chicken or crumbled tofu.

Leftovers store well in the fridge for up to 3 days and reheat beautifully.
