These Baked Blueberry Donuts are soft, sweet, and bursting with juicy blueberries. Made with coconut sugar and almond milk, they’re dairy-free and baked instead of fried—perfect for a healthier treat that still feels indulgent.
Ingredients
1 ½ cups all-purpose flour
½ cup coconut sugar
2 teaspoons baking powder
½ teaspoon salt
1 cup unsweetened almond milk
1 teaspoon vanilla extract
1 cup fresh blueberries
Optional: 1 teaspoon lemon zest
Instructions
1. Preheat oven to 350°F (180°C). Lightly grease a donut pan (or use a muffin tin if needed).
2. In a large bowl, whisk together flour, coconut sugar, baking powder, and salt.
3. In a separate bowl, combine almond milk, vanilla extract, and optional lemon zest. Whisk well.
4. Slowly pour wet ingredients into the dry ingredients, stirring gently until just combined.
5. Fold in the fresh blueberries carefully.
6. Spoon or pipe the batter into the donut pan, filling each cavity about 2/3 full.
7. Bake for 15–20 minutes or until golden and a toothpick inserted comes out clean.
8. Let cool for a few minutes in the pan, then transfer to a wire rack to finish cooling.
Notes
Use fresh blueberries for best results; frozen can make the batter too wet.
A piping bag helps fill the donut molds more cleanly and evenly.
Optional lemon zest adds a refreshing citrusy twist.
