Ingredients

▢ 4 large flour tortillas

▢ 6 large eggs, scrambled

▢ 6 oz smoked turkey sausage, crumbled

▢ 1/2 cup shredded cheddar cheese

▢ 1/3 cup diced onions

▢ 1/3 cup diced bell peppers (any color)

▢ 1/3 cup diced tomatoes or 1/4 cup salsa

▢ 1/2 cup canned black beans, drained and rinsed

▢ 2 tablespoons chopped cilantro

▢ 1 tablespoon olive oil

▢ Salt and pepper to taste


Instructions

1. Dice the onions, bell peppers, tomatoes, and cilantro. Crumble the smoked turkey sausage.

2. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned.

3. Add onions and bell peppers; cook until softened, about 5 minutes. Stir in tomatoes or salsa and cook for another 2–3 minutes. Set aside.

4. In a separate skillet, scramble the eggs to your liking. Season with salt and pepper.

5. Warm the flour tortillas in a dry skillet or microwave until pliable.

6. To assemble: Fill each tortilla with scrambled eggs, sausage mixture, cheese, black beans, and cilantro.

7. Fold in the sides and roll tightly from the bottom up to form burritos. Serve warm or wrap for later!
