Description
Cheesy Ground Beef Enchiladas are the ultimate comfort food. Perfect for busy weeknights, picky eaters, or anyone craving a hearty, cheesy Tex-Mex meal.
Ingredients
1 lb ground beef
1/2 white onion, diced
3 tablespoons taco seasoning
1/4 cup water
10–14 corn tortillas, warmed
2 cups enchilada sauce
3 cups Cheddar cheese, grated
Sour cream, for serving
Fresh cilantro, for serving
Instructions
1. Preheat oven to 375°F.
2. In a large skillet over medium heat, brown the ground beef and diced onion until the beef is no longer pink. Drain excess fat.
3. Add taco seasoning and 1/4 cup water. Simmer until the water is mostly evaporated. Remove from heat and set aside.
4. Spread 1/2 cup of enchilada sauce on the bottom of a 9×13-inch baking dish.
5. Fill each tortilla with some ground beef mixture and cheddar cheese. Roll tightly.
6. Place the filled tortillas seam-side down in the dish.
7. Pour remaining enchilada sauce evenly over the tortillas. Top with remaining cheddar cheese.
8. Bake for 20 minutes, until sauce is bubbling and cheese is melted.
9. Serve hot, garnished with sour cream and fresh cilantro.
Notes
To make ahead, assemble enchiladas and refrigerate unbaked for up to 24 hours.
Use flour tortillas if you prefer—just note they may get a bit softer.
