Description
These oven-baked crispy ground beef tacos are the ultimate weeknight dinner! Stuffed with juicy seasoned beef, melty cheese, and dipped in enchilada sauce before baking, they come out perfectly crispy and full of bold flavor.
Ingredients
1 lb ground beef (lean preferred)
1 packet taco seasoning
1 cup shredded cheese (cheddar, Monterey Jack, or blend)
8 corn tortillas (or flour tortillas)
1/2 cup enchilada sauce
Optional toppings: avocado, salsa, fresh cilantro
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large skillet over medium heat, cook the ground beef until browned and fully cooked, about 5–7 minutes. Drain excess fat.
3. Add taco seasoning and water according to packet instructions. Let simmer to absorb flavor.
4. Lightly grease a 9×13-inch baking dish.
5. Dip each tortilla into the enchilada sauce, coating both sides. Add seasoned beef and a sprinkle of cheese in the center, fold, and place seam-side down in the dish.
6. Repeat with all tortillas.
7. Drizzle remaining enchilada sauce over the top and sprinkle with more cheese.
8. Bake for 15–20 minutes until cheese is melted and bubbly, and tortillas are crispy.
9. Cool slightly and serve with your favorite toppings like avocado, salsa, or cilantro.
Notes
To keep tortillas from cracking, warm them slightly before dipping in sauce.
For extra crispy edges, lightly spray the tops with cooking oil before baking.
Can be made ahead and reheated — great for meal prep!
