Ingredients
2 pounds boneless, skinless chicken breasts
1 can (10.5 oz) cream of chicken soup
1 packet (1 oz) dry ranch seasoning mix
1/2 cup chicken broth
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper (optional)
Instructions
1. Place the chicken breasts in the bottom of your slow cooker.
2. In a medium bowl, whisk together the cream of chicken soup, ranch seasoning mix, chicken broth, garlic powder, onion powder, black pepper, and cayenne pepper (if using).
3. Pour the soup mixture over the chicken, making sure all the pieces are coated.
4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.
5. (If using frozen chicken breasts, cook on LOW for 8 hours without thawing first.)
6. Shred the chicken with two forks directly in the crock pot. Stir everything together to combine the shredded chicken with the sauce.
7. Serve hot over rice, mashed potatoes, or noodles for a comforting, creamy meal.
Notes
This dish makes excellent leftovers and can be refrigerated for up to 3 days.
It also freezes well—just cool completely and store in an airtight container for up to 2 months.
