Ingredients
▢ 2 large seedless cucumbers
▢ 4 oz cream cheese, softened
▢ ½ avocado, sliced thin
▢ 2 oz smoked salmon or smoked turkey (optional)
▢ 1 tsp everything bagel seasoning (optional)
Instructions
1. Use a vegetable peeler to slice the cucumbers into long, thin ribbons. Discard the first few strips with tough skin.
2. In a small bowl, mix the softened cream cheese with chopped smoked salmon or turkey (if using).
3. Lay one cucumber ribbon flat on a clean surface.
4. Spread a thin layer of the cream cheese mixture over the ribbon.
5. Place a sliver of avocado at one end, then roll the cucumber tightly around the filling.
6. Repeat with the remaining cucumber ribbons and filling.
7. Chill the rolls in the fridge for 30 minutes before serving.
8. Optional: Sprinkle with everything bagel seasoning just before serving.
