Description
Tender, flavorful Easy Crockpot Fajitas made with juicy chicken or beef, colorful peppers, and zesty seasoning. Perfect for busy nights!
Ingredients
1 1/2 pounds boneless skinless chicken breasts or beef strips
3 bell peppers (red, yellow, green), sliced
1 large onion, sliced
2 tablespoons olive oil
1 packet (1 ounce) fajita seasoning
1/4 cup fresh lime juice
8 medium flour tortillas
Optional toppings: sour cream, shredded cheese, avocado, salsa
Instructions
1. Slice chicken or beef into thin strips. Slice peppers and onion.
2. Add meat and vegetables to the crockpot.
3. Drizzle with olive oil, sprinkle fajita seasoning, and pour in lime juice. Toss to coat.
4. Cover and cook on LOW for 5–6 hours or HIGH for 3 hours until meat is tender.
5. Warm tortillas in a skillet or oven before serving.
6. Fill tortillas with meat and veggies, add desired toppings, and enjoy.
Notes
For juicier chicken, use thighs instead of breasts.
Add jalapeños or cayenne for extra heat.
Leftovers keep in the fridge for up to 4 days.
