Ingredients

1 pound ground beef

1 cup long-grain white rice (uncooked)

2 cups beef broth or beef consommé

1 can (10.5 oz) French onion soup

1 medium onion, chopped

2 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 cup shredded cheese (Swiss or mozzarella)

1 tablespoon olive oil


Instructions

1. Preheat oven to 350°F (175°C).

2. In a large skillet over medium heat, heat olive oil. Add chopped onion and sauté for 3–4 minutes until softened.

3. Add garlic and cook for 1 more minute until fragrant.

4. Add ground beef to the skillet and cook for 5–6 minutes, breaking it up, until browned and no longer pink.

5. Drain excess fat from the skillet.

6. Stir in beef broth or consommé, French onion soup, rice, salt, and pepper. Simmer for 1–2 minutes to combine.

7. Transfer the mixture to a greased 9×13-inch baking dish.

8. Top evenly with shredded cheese.

9. Cover with foil and bake for 25 minutes.

10. Remove foil and bake another 15–20 minutes until bubbly and golden on top.

11. Let rest 5–10 minutes before serving.

Notes

You can substitute Swiss with mozzarella or provolone depending on your taste.

For a deeper flavor, try using beef consommé instead of regular broth.

Leftovers reheat well and make a great lunch the next day.
