Description
This Garlic Parmesan Crockpot Chicken and Potatoes is a one-pot wonder! Juicy chicken breasts and tender baby potatoes slow-cooked in a savory garlic-Parmesan broth—perfect for busy weeknights or cozy weekends.
Ingredients
4 boneless, skinless chicken breasts
1 lb baby potatoes
1/4 cup grated Parmesan cheese (divided)
4 cloves garlic, minced
1/2 cup chicken broth
1 teaspoon Italian seasoning
Salt, to taste
Black pepper, to taste
Fresh parsley, for garnish
Instructions
1. Spray the inside of your crockpot with non-stick spray or lightly grease with olive oil.
2. Season chicken breasts with salt, pepper, and Italian seasoning.
3. Place the chicken in the bottom of the crockpot.
4. In a small bowl, mix together minced garlic, chicken broth, and half of the Parmesan cheese.
5. Pour the mixture over the chicken in the crockpot.
6. Add baby potatoes on top and around the chicken.
7. Cover and cook on LOW for 6–8 hours or HIGH for 4 hours.
8. About 15 minutes before done, sprinkle the remaining Parmesan cheese over the top. Cover and let melt.
9. Serve chicken whole or shredded, garnished with fresh parsley.
Notes
For even more flavor, add a splash of lemon juice or a few red pepper flakes.
You can swap baby potatoes for cubed Yukon Gold or red potatoes.
Leftovers are delicious and reheat well the next day.
