Description
A sizzling, one-pan Garlic Steak Bites and Potatoes dinner with crispy spuds and juicy steak bites. Quick, easy, and packed with bold flavor!
Ingredients
1 tbsp olive oil
4 tbsp unsalted butter, divided
1 lb Yukon Gold potatoes, diced into ½-inch cubes (or use red-skinned or fingerling)
4 cloves garlic, minced
1 tsp dried rosemary
1 tsp dried oregano
½ tsp kosher salt
½ tsp ground pepper
1½ lbs sirloin steak, cut into 1-inch cubes (or NY strip, tenderloin, or stir fry beef)
Fresh chopped parsley (optional)
Instructions
1. Heat a cast iron skillet over medium-high heat. Add olive oil and 2 tbsp of the butter. Let the butter melt completely.
2. Add potatoes, garlic, rosemary, oregano, salt, and pepper. Cook undisturbed for 4 minutes. Stir and cook another 3–4 minutes until fork tender. Remove and set aside.
3. Increase heat to high. Add remaining 2 tbsp butter. Add steak in a single layer. Sear for 1 minute, then stir or flip and cook another 1–2 minutes to desired doneness.
4. Add potatoes back to skillet and toss everything together.
5. Sprinkle with fresh parsley (if using) and serve warm.
Notes
If potatoes aren’t tender after 8 minutes, add 2 tbsp warm water, cover, and cook for 3–4 more minutes until water evaporates.
Don’t overcrowd the skillet—this helps everything sear instead of steam.
Use a meat thermometer to check doneness:
Rare: 125-130°F
Medium-rare: 130-140°F
Medium: 140-150°F
Medium-well: 150-160°F
Well-done: 160-165°F
