Description
This cozy and hearty Hobo Casserole is a family-friendly classic! Made with ground beef, tender potatoes, creamy mushroom soup, and plenty of melted cheese, it’s the perfect one-dish comfort meal for busy weeknights.
Ingredients
1 pound ground beef
4 medium potatoes, thinly sliced
1 onion, diced
2 cups shredded cheese (cheddar or your favorite)
1 can (10.5 oz) cream of mushroom soup
1 cup beef broth (low-sodium recommended)
Salt, to taste
Black pepper, to taste
Optional: 1 cup mixed vegetables (carrots, peas, corn)
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large skillet over medium heat, cook ground beef with diced onion. Season with salt and pepper and cook until browned. Drain excess fat.
3. In a large mixing bowl, combine cooked beef and onions with sliced potatoes, cream of mushroom soup, beef broth, and optional veggies. Mix until well combined.
4. Transfer mixture into a greased 9×13 inch baking dish.
5. Top evenly with shredded cheese.
6. Cover with aluminum foil and bake for 45 minutes.
7. Remove foil and bake an additional 15 minutes until cheese is bubbly and golden.
8. Let rest a few minutes before serving.
Notes
You can use frozen mixed veggies to save time — no need to thaw.
Slice potatoes thinly to ensure they cook through evenly.
Swap cream of mushroom with cream of chicken or celery if desired.
