Ingredients
▢ 1.5 lbs Yukon Gold potatoes, diced
▢ 1 cup smoked turkey, chopped
▢ 1 yellow onion, diced
▢ 1 bell pepper (any color), diced
▢ 2 cloves garlic, minced
▢ 2 tbsp olive oil
▢ 4–6 eggs
▢ 1 tsp smoked paprika
▢ ½ tsp salt
▢ ½ tsp black pepper
▢ Pinch cayenne pepper (optional)
▢ Fresh parsley, chopped (for garnish)
Instructions
1. Dice potatoes into ½-inch cubes.
2. Heat olive oil in a large skillet over medium heat.
3. Add diced onion and bell pepper; cook for 5-7 minutes until softened.
4. Stir in smoked turkey and minced garlic; cook for another 2-3 minutes.
5. Add diced potatoes to the skillet and cook, stirring occasionally, for 15–20 minutes until golden brown and crispy.
6. Season with salt, pepper, smoked paprika, and cayenne if using.
7. Make small wells in the hash and crack an egg into each.
8. Cover the skillet and cook for 5–7 minutes, or until eggs are set to your liking.
9. Garnish with fresh parsley and serve immediately.
Notes
• You can swap the smoked turkey for turkey sausage, ham, or even cooked bacon.
• Don’t overcrowd the skillet—cook in two batches if needed for maximum crispiness.
• Add shredded cheese before adding the eggs for an extra indulgent touch.
