A creamy, cheesy Low Carb Chicken Casserole packed with broccoli and tender chicken. Perfect for keto-friendly weeknight dinners or make-ahead meals.
Ingredients
3 cups cooked chicken, shredded or chopped (rotisserie works great)
2 cups broccoli florets, lightly steamed
8 oz cream cheese, softened
1/2 cup heavy cream
1 1/2 cups shredded sharp cheddar cheese, divided
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp salt (or to taste)
1/4 tsp black pepper
Instructions
1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a mixing bowl, combine cream cheese, heavy cream, garlic powder, onion powder, paprika, salt, and pepper until smooth.
3. Spread chicken and broccoli evenly in the baking dish.
4. Pour the cream cheese mixture over the chicken and broccoli, spreading it evenly.
5. Top with 1 cup of shredded cheddar cheese.
6. Bake for 20–25 minutes, until hot and bubbly with melted cheese on top.
7. Let rest for 5 minutes before serving.
Notes
You can swap broccoli for cauliflower, spinach, or zucchini.
Make ahead: Assemble the casserole, cover, and refrigerate up to 24 hours before baking.
Freeze option: Wrap tightly and freeze for up to 2 months. Thaw overnight in the fridge before baking.
