1 teaspoon Italian seasoning

2 tablespoons olive oil

3 cloves garlic, minced (about 1 tablespoon)

1/2 cup oil-packed sun-dried tomatoes, drained and chopped

3/4 cup low-sodium chicken broth

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

1/4 cup fresh basil, thinly sliced


Instructions

1. Pat chicken dry. Season both sides with salt, pepper, and Italian seasoning.

2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden; transfer to a plate.

3. Reduce heat to medium. Add garlic; cook 30 seconds until fragrant.

4. Stir in sun-dried tomatoes. Pour in chicken broth and scrape up browned bits.

5. Add heavy cream and Parmesan; stir until smooth. Simmer 2–3 minutes to thicken slightly.

6. Return chicken and any juices to the skillet. Spoon sauce over the chicken and simmer 4–6 minutes, or until the thickest piece reaches 165°F.

7. Stir in red pepper flakes (if using). Turn off heat and fold in fresh basil.

8. Taste and adjust salt/pepper. Serve over pasta, rice, or zucchini noodles, spooning extra sauce on top.

Notes

Lighten it up: Swap 1/2 cup of the cream with 1/2 cup milk; simmer a minute longer.
