These Sausage Egg Breakfast Rolls are a flaky, savory handheld breakfast that’s easy to make and perfect for busy mornings or weekend brunch. With creamy eggs, melty cheese, and seasoned sausage wrapped in crescent roll dough, every bite is a warm, comforting hug.
Ingredients
1 pound breakfast sausage
6 large eggs
1 cup shredded cheese (cheddar, mozzarella, or preferred blend)
1 can refrigerated crescent roll dough
Salt, to taste
Black pepper, to taste
Instructions
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a medium skillet over medium heat, cook sausage until browned and crumbly. Drain excess fat if needed.
3. In a bowl, beat eggs with salt and pepper. Pour into skillet with sausage and scramble until just set.
4. Stir in shredded cheese and mix until melted and combined. Remove from heat.
5. Unroll crescent roll dough onto a clean surface. Cut into 4-inch squares.
6. Place a spoonful of the sausage-egg-cheese mixture in the center of each square.
7. Fold the dough corners over the filling and pinch to seal into a pouch.
8. Place seam-side down on prepared baking sheet.
9. Bake for 12–15 minutes, or until golden brown.
10. Let cool slightly before serving. Enjoy warm!
Notes
You can make the filling ahead of time and assemble in the morning.
Try brushing the tops with a little melted butter before baking for an extra golden finish.
Great for freezing — reheat in the oven or air fryer.
