This Slow Cook Brisket Crock Pot recipe delivers fall-apart tender beef infused with rich, smoky, and slightly sweet flavors. Perfect for Sunday dinners or holiday gatherings.
Ingredients
▢ 3–4 lbs beef brisket
▢ 1 large onion, sliced
▢ 4 cloves garlic, minced
▢ 1 cup beef broth
▢ 2 tablespoons Worcestershire sauce
▢ 2 tablespoons tomato paste
▢ 1 tablespoon apple cider vinegar
▢ 2 tablespoons brown sugar
▢ 1 teaspoon smoked paprika
▢ 1 teaspoon dried thyme
▢ 1/4 teaspoon cayenne pepper (optional)
▢ Salt and black pepper, to taste
▢ 1 tablespoon olive oil (for searing)
Instructions
1. Pat brisket dry and season with salt and pepper. Sear in olive oil on all sides until browned.
2. Layer sliced onion and garlic at the bottom of the slow cooker.
3. Place brisket on top of the onions and garlic.
4. Whisk broth, Worcestershire sauce, tomato paste, vinegar, brown sugar, smoked paprika, thyme, cayenne (if using), salt, and pepper in a bowl.
5. Pour mixture over brisket, making sure it’s mostly submerged.
6. Cover and cook on low for 8–10 hours, or on high for 4–5 hours until fork-tender.
7. Remove brisket and let rest for 15 minutes before slicing against the grain.
8. Skim fat from cooking liquid and serve sauce alongside the sliced brisket.
Notes
• For extra depth, add a splash of red wine with the broth.
• Leftovers make amazing sandwiches the next day.
