Description

Slow Cooker Beef Manhattan is the ultimate comfort food—fork-tender chuck roast smothered in rich, savory gravy served over mashed potatoes or thick-sliced bread. This hearty meal cooks low and slow for melt-in-your-mouth perfection.


Ingredients

3 lb beef chuck roast

1 large onion, chopped

3 carrots, chopped

2 celery stalks, chopped

2 cups beef broth

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 tablespoon brown sugar

1 teaspoon dried thyme

2 bay leaves

2 tablespoons cornstarch (or flour)

2 tablespoons water (or broth)

Salt and pepper, to taste


Instructions

1. Season the beef roast generously with salt and pepper on all sides.

2. Place chopped onion, carrots, and celery in the bottom of the slow cooker.

3. Lay the seasoned beef roast on top of the vegetables.

4. In a small bowl, whisk together beef broth, tomato paste, Worcestershire sauce, brown sugar, thyme, and bay leaves.

5. Pour the mixture over the beef in the slow cooker.

6. Cover and cook on LOW for 6–8 hours, or until the beef is fork-tender.

7. About 30 minutes before serving, whisk the cornstarch and water together until smooth.

8. Remove 1 cup of the cooking liquid and whisk it into the cornstarch mixture. Pour back into the slow cooker and stir.

9. Set the slow cooker to HIGH and cook uncovered for another 30 minutes, or until the gravy thickens.

10. Remove bay leaves, shred beef with two forks, and serve with the thickened gravy over mashed potatoes or bread.

Notes

For extra flavor, sear the roast in a hot skillet before placing it in the slow cooker.
