Ingredients

2 lbs boneless, skinless chicken breasts or thighs

1/2 cup unsalted butter (1 stick), melted

6 cloves garlic, minced

1 cup low-sodium chicken broth

1 tsp salt

1/2 tsp black pepper

1 tsp paprika

2 tbsp fresh lemon juice

2 tbsp chopped fresh parsley (for garnish)


Instructions

1. Season chicken with salt, pepper, and paprika.

2. In a small saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.

3. Place chicken in the slow cooker. Pour garlic butter over chicken.

4. Add chicken broth to the slow cooker.

5. Cover and cook on low for 4–5 hours, or high for 2–3 hours, until chicken is tender.

6. Add lemon juice and stir gently.

7. Garnish with parsley and serve warm.

Notes

For extra flavor, add vegetables like carrots or baby potatoes in the slow cooker with the chicken.

If you prefer a thicker sauce, whisk 1 tbsp cornstarch with 2 tbsp water and stir into the sauce during the last 30 minutes of cooking.
