2 cups crushed sugar cookies (about 20 cookies)

4 tablespoons unsalted butter, melted

24 oz (3 packages) cream cheese, softened

3/4 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream


Instructions

1. Preheat oven to 350°F (175°C). Lightly grease a 9-inch springform pan.

2. Crush the sugar cookies into fine crumbs using a food processor. Mix with melted butter until evenly combined.

3. Press the cookie mixture into the bottom of the prepared pan to form an even crust. Set aside.

4. In a large bowl, beat the cream cheese and granulated sugar together until smooth and creamy.

5. Add eggs one at a time, mixing well after each. Stir in vanilla extract.

6. Fold in the sour cream gently until just combined.

7. Pour the cheesecake filling over the crust and smooth the top.

9. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.

10. Remove from oven, run a knife around the edges, then chill in the fridge for at least 4 hours or overnight before serving.
