Description

This classic Sweet Potato Casserole with a golden marshmallow topping is a holiday must-have! Creamy mashed sweet potatoes are blended with warm spices, brown sugar, and vanilla, then baked to perfection with a gooey, toasted marshmallow crown.


Ingredients

▢ 4 cups mashed sweet potatoes (about 4–5 medium sweet potatoes)

▢ 1/2 cup unsalted butter, melted

▢ 1/2 cup packed brown sugar

▢ 2 large eggs, beaten

▢ 1/2 cup milk

▢ 1 teaspoon vanilla extract

▢ 1/2 teaspoon ground cinnamon

▢ 1/4 teaspoon ground nutmeg

▢ 1/2 teaspoon salt

▢ 2 cups mini marshmallows


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.

2. Boil or bake sweet potatoes until fork-tender — about 30–40 minutes boiling or 45–60 minutes baking. Let cool slightly.

3. Peel and mash the sweet potatoes until smooth.

4. In a large bowl, mix mashed sweet potatoes with melted butter, brown sugar, beaten eggs, milk, vanilla, cinnamon, nutmeg, and salt.

5. Pour the sweet potato mixture into the prepared baking dish and spread evenly.

6. Bake uncovered for 20–25 minutes, until warmed through and slightly bubbling at the edges.

7. Top evenly with mini marshmallows.

8. Return to oven and broil for 2–3 minutes, watching carefully, until marshmallows are golden brown.

9. Let cool slightly before serving.

Notes

Make ahead tip: Assemble casserole (without marshmallows) and refrigerate up to 2 days in advance. Add marshmallows just before baking.

Optional: Add a pecan crumble topping underneath the marshmallows for extra crunch!
