Ingredients
2 medium zucchini, spiralized
1 tablespoon olive oil
2 cloves garlic, minced
1/2 small onion, finely chopped
1 cup cherry tomatoes, halved
1/2 cup diced smoked turkey
1/4 cup chicken broth
1 teaspoon balsamic vinegar
Salt and pepper, to taste
Pinch of red pepper flakes (optional)
Fresh basil leaves, for garnish
Instructions
1. Use a spiralizer to create zucchini noodles. If unavailable, a vegetable peeler can create wide zucchini ribbons.
2. In a large skillet, heat olive oil over medium heat. Add garlic and onion, sautéing until fragrant, about 2-3 minutes.
3. Stir in the diced smoked turkey and cook for 2-3 minutes until lightly browned.
4. Add cherry tomatoes and cook until softened, about 3-4 minutes.
5. Pour in the chicken broth and balsamic vinegar. Season with salt, pepper, and optional red pepper flakes. Simmer for 1-2 minutes.
6. Add the zucchini noodles and toss gently. Cook for 2-3 minutes, until just tender but not soggy.
7. Remove from heat, garnish with fresh basil, and serve immediately.
