Description
This hearty Classic Beef Stew is the ultimate comfort food — tender beef, hearty vegetables, and a savory broth simmered to perfection. Perfect for chilly nights and even better the next day!
Ingredients
2 lbs stewing beef, cut into cubes
2 tablespoons olive oil
1 large onion, chopped
3 garlic cloves, minced
3 carrots, peeled and sliced
3 potatoes, peeled and cubed
2 celery stalks, chopped
4 cups beef broth
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
2 bay leaves
1 tablespoon cornstarch
2 tablespoons cold water
½ cup frozen peas
4 oz smoked turkey sausage, sliced (optional)
Salt and black pepper, to taste
⅛ teaspoon cayenne pepper (optional)
Instructions
1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown the beef in batches, seasoning with salt and pepper. Set aside.
2. Add onion, garlic, carrots, potatoes, and celery to the pot. Cook for 5–7 minutes, until onion is softened.
3. Stir in tomato paste, Worcestershire sauce, thyme, bay leaves, salt, pepper, and cayenne (if using). Cook for 1 minute.
4. Return browned beef to the pot. Add beef broth, bring to a boil, then reduce heat and simmer covered for 1½–2 hours, until beef is tender.
5. Mix cornstarch and cold water in a small bowl to make a slurry. Stir into the stew and simmer for a few minutes until thickened.
6. Add peas and smoked turkey sausage (if using) during the last 5 minutes of cooking.
7. Remove bay leaves. Serve hot with crusty bread. So comforting!
Notes
You can make this stew a day ahead — it tastes even better the next day!
Skip the smoked sausage if you prefer a more traditional flavor.
For extra richness, add a splash of red wine when deglazing the pot.
