This hearty Tortilla Breakfast Bake layers tortillas, eggs, sausage, bacon, cheese, and veggies for a cozy and flavorful start to the day. Perfect for weekend brunch or meal prep!
Ingredients
▢ 6 corn or flour tortillas
▢ 8 large eggs
▢ 1/3 cup milk or cream
▢ 1/2 pound breakfast sausage, cooked and crumbled
▢ 4 slices bacon, cooked and crumbled
▢ 1 cup shredded cheese (cheddar or Mexican blend)
▢ 1/4 cup diced onions
▢ 1/4 cup diced bell peppers
▢ 2 tablespoons chopped cilantro
▢ 1/2 teaspoon salt
▢ 1/4 teaspoon black pepper
Instructions
1. Preheat oven to 375°F (190°C). Grease or line a deep baking dish.
2. Cook sausage and bacon until browned and crisp. Drain and set aside.
3. In a bowl, whisk eggs, milk or cream, salt, and pepper until frothy.
4. Layer 3 tortillas on the bottom of the baking dish.
5. Sprinkle half of the sausage, bacon, onions, bell peppers, and cheese.
6. Pour half the egg mixture over the layer.
7. Repeat the layers with remaining ingredients.
8. Press gently to coat tortillas evenly. Top with chopped cilantro.
9. Bake for 30–35 minutes until eggs are set and cheese is golden.
10. Cool for a few minutes before slicing and serving.
Notes
• Use pre-cooked sausage and bacon to save time.
• Swap in spinach or mushrooms for extra veggies.
