Ingredients
  

  • 2 cups frozen coconut chunks or coconut cream frozen in cubes
  • 1/4–1/2 cup coconut milk
  • 1–2 limes juiced and zested

Method
 

  1. Add the frozen coconut, coconut milk, and fresh lime juice to a blender.
  2. Blend until smooth and creamy, stopping to scrape down the sides as needed.
  3. Taste and adjust with more lime juice for brightness or more coconut milk for creaminess.
  4. Blend again until the mixture reaches a soft, scoopable texture.
  5. Serve immediately for a soft sorbet.
  6. Freeze for 1–2 hours for a firmer scoop.
  7. Finish with lime zest on top before serving.

Notes

Store leftovers in an airtight container in the freezer for up to 3 months and let it soften slightly before scooping. Serve alongside fresh fruit or simple cookies for an easy, refreshing dessert.
