Ingredients
  

  • 2 chicken breasts cut into bite-sized pieces
  • 2 cups jasmine rice cooked
  • 1 cup broccoli florets
  • 1 cup carrots shredded
  • 1 cucumber sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt to taste
  • black pepper to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tbsp honey
  • 1 tsp lime juice
  • green onions sliced, for garnish
  • sesame seeds for garnish

Method
 

  1. Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
  2. Season the chicken with garlic powder, smoked paprika, salt, and black pepper.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Cook the chicken for 6–8 minutes until fully cooked.
  5. Steam the broccoli until tender-crisp.
  6. Prepare the shredded carrots, sliced cucumber, and warm jasmine rice.
  7. Divide rice into bowls.
  8. Top with chicken, broccoli, carrots, and cucumber.
  9. Drizzle sauce over the chicken.
  10. Garnish with green onions and sesame seeds.

Notes

Store leftovers in the fridge for up to 3–4 days, keeping components separate when possible for best texture. Serve with simple sides like a fresh salad or steamed vegetables for a complete meal.
