Ingredients
  

  • 2 cups Greek yogurt thick, full-fat works best
  • 3 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup cream cheese softened
  • 2 tbsp powdered sugar
  • 1 cup fresh strawberries sliced
  • 1/2 cup blueberries
  • 1/4 cup graham crackers crushed

Method
 

  1. Line a baking sheet with parchment paper.
  2. Mix the Greek yogurt, honey, and vanilla extract in a bowl until smooth.
  3. Beat the cream cheese and powdered sugar in a separate bowl until creamy.
  4. Spread the yogurt mixture evenly onto the lined baking sheet about 1/2-inch thick.
  5. Drop spoonfuls of the cream cheese mixture on top and swirl gently.
  6. Scatter the strawberries, blueberries, and crushed graham crackers over the top.
  7. Freeze for 3–4 hours until firm but slightly creamy in the center, then break into pieces.

Notes

Store the bark in an airtight container in the freezer for up to 3 months, separating layers with parchment to prevent sticking. Serve straight from the freezer for the best texture, and pair with fresh fruit or a light drink for an easy treat.
