Blueberry Overnight Oats

Ingredients
  

  • 1/2 cup rolled oats
  • 3/4 cup milk
  • 1/2 cup blueberries fresh or frozen, divided
  • 2 tbsp Greek yogurt
  • 1 tbsp honey or maple syrup
  • 1 tbsp chia seeds optional
  • 1/2 tsp vanilla extract

Method
 

  1. Mash half of the blueberries in a jar to release their juices.
  2. Add rolled oats, milk, Greek yogurt, honey or maple syrup, chia seeds, and vanilla extract to the jar.
  3. Stir until everything is well combined.
  4. Fold in the remaining whole blueberries.
  5. Cover and refrigerate overnight or at least 4 hours.
  6. Stir before serving and add toppings if desired.

Notes

Store covered in the refrigerator for up to 3–4 days and stir before serving if thickened. Serve with extra berries, granola, or nuts for added texture.
