Ingredients
  

  • 6 large egg yolks room temperature
  • 1 teaspoon vanilla extract optional
  • 1 cup sugar 200g
  • 500 g Savoiardi (ladyfingers) biscuits
  • 1 1/2 cup strongly brewed coffee or espresso cooled to room temperature
  • 2 cups heavy whipping cream cold
  • 2 tubs mascarpone cheese 8 oz each tub
  • 2 tablespoons unsweetened cocoa powder for dusting, about

Method
 

  1. Whisk the egg yolks, sugar, and vanilla extract together in a medium rimmed bowl until mixed.
  2. Place the bowl over a double boiler and whisk for 10 minutes until the mixture is thickened.
  3. Remove from heat and cool for 10 minutes, stirring every couple of minutes to prevent a crust from forming.
  4. Beat the cold heavy whipping cream in a separate bowl for 3 to 4 minutes, then refrigerate.
  5. Beat the mascarpone cheese in a large bowl.
  6. Add half of the egg mixture and beat until mixed.
  7. Add the remaining egg mixture and beat until well combined.
  8. Gently fold the whipped cream into the mascarpone mixture using a spatula.
  9. Briefly dip each ladyfinger into the cooled coffee or espresso and arrange in a 13x9-inch dish to form the first layer.
  10. Spread half of the cream mixture over the ladyfinger layer and level the surface.
  11. Dip and arrange the remaining ladyfingers to create a second layer.
  12. Top with the remaining cream mixture and level the surface.
  13. Cover with plastic wrap and refrigerate overnight.
  14. Dust with cocoa powder just before serving.

Notes

Store leftovers covered in the refrigerator for up to 5 days or freeze and thaw in the refrigerator before serving. Serve chilled with a fresh dusting of cocoa powder and pair with coffee, tea, or fresh fruit.
