Coconut Chicken Satay Skewers

Ingredients
  

  • 1 1/2 lbs chicken breast cut into strips
  • 1/2 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce for sauce
  • 1 tbsp honey for sauce
  • 1 tbsp lime juice
  • warm water to loosen sauce
  • wooden skewers soaked

Method
 

  1. Combine coconut milk, soy sauce, honey, turmeric, cumin, and garlic powder, then marinate the chicken strips for at least 30 minutes.
  2. Thread the marinated chicken onto soaked wooden skewers.
  3. Grill or pan-sear the skewers for 3–4 minutes per side until cooked through.
  4. Whisk peanut butter, soy sauce, honey, lime juice, and warm water until smooth.
  5. Serve the skewers with peanut sauce and lime wedges.

Notes

Store leftover cooked chicken in the refrigerator for up to 3–4 days and keep the peanut sauce separate. Serve with simple sides like steamed rice or a fresh salad for a complete meal.
