Ingredients
  

  • 12 oz pasta of choice
  • 2 cups cherry tomatoes halved
  • 3 cloves garlic minced
  • 3 tbsp butter
  • 1/2 cup heavy cream
  • 1/2 cup parmesan grated
  • fresh basil handful
  • salt
  • pepper
  • red pepper flakes

Method
 

  1. Cook the pasta and reserve 1/2 cup of pasta water before draining.
  2. Sauté minced garlic in butter until golden, then add halved cherry tomatoes and cook for 5 minutes until softened.
  3. Stir in heavy cream and grated parmesan and let it simmer briefly until combined.
  4. Toss the cooked pasta with the sauce, adding reserved pasta water as needed to loosen.
  5. Finish with fresh basil and mix gently before serving.

Notes

Store leftovers in the fridge for up to 3–4 days and reheat with a splash of water or milk to loosen the sauce. Serve with a simple salad or crusty bread for a complete, comforting meal.
