Ingredients
  

  • 1.5 cups flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 cup sugar
  • 2 eggs
  • 0.5 cup milk
  • 0.5 cup oil
  • 0.25 cup cocoa powder
  • 1 tsp coffee optional
  • 0.5 cup boiling water
  • 0.33 cup chocolate
  • 2 tbsp butter or margarine
  • 3 tbsp milk for ganache

Method
 

  1. Preheat oven to 350°F (175°C) and grease a pan.
  2. Mix flour, baking powder, baking soda, sugar, and cocoa powder in a bowl.
  3. Add eggs, milk, and oil, then mix until smooth.
  4. Stir in coffee, then carefully add boiling water and mix until combined.
  5. Pour batter into the pan and bake for 30–35 minutes.
  6. Let the cake cool slightly.
  7. Melt chocolate, butter, and milk together until smooth.
  8. Pour ganache over the slightly warm cake.

Notes

Store leftovers in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve with fresh fruit or a scoop of vanilla ice cream for a simple, comforting dessert.
