Frozen Strawberry Cream Sandwiches

Ingredients
  

  • 8–10 graham crackers halved
  • 1 cup heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries finely chopped
  • 1/2 cup cream cheese softened

Method
 

  1. Beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
  2. Whip the heavy cream to stiff peaks in a separate bowl.
  3. Gently fold the whipped cream into the cream cheese mixture until combined.
  4. Fold in the finely chopped strawberries until evenly distributed.
  5. Spread a thick layer of the strawberry cream onto one graham cracker half.
  6. Top with another graham cracker half to form a sandwich.
  7. Repeat with remaining crackers and filling.
  8. Freeze for 2–3 hours until firm, then serve from the freezer.

Notes

Store sandwiches in an airtight container in the freezer for up to 3 months to maintain texture. Serve straight from the freezer with fresh fruit or a cold drink for an easy, refreshing treat.
