Method
- Season the chicken with garlic powder, smoked paprika, salt, and black pepper.
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
- Sear the chicken for 5–6 minutes per side until golden and cooked through, then remove and set aside.
- Melt the remaining butter in the same skillet and sauté the minced garlic for about 30 seconds.
- Add the corn and cook for 3–4 minutes, allowing it to caramelize slightly.
- Stir in the chicken broth, heavy cream, and Parmesan cheese.
- Simmer until the sauce becomes creamy and smooth.
- Return the chicken to the skillet and spoon the sauce over the top.
- Cook for another 2–3 minutes until everything is heated through and coated.
- Sprinkle with chopped fresh parsley and serve.
Notes
Store leftovers in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve with rice, mashed potatoes, or crusty bread to soak up the creamy corn sauce.
