Ginger Pineapple Chicken Stir Fry

Sweet, savory, and just a little zingy—this dish brings big comfort with hardly any fuss. It comes together with simple ingredients you probably already have hanging around the kitchen.

Ingredients
  

  • 1 1/2 lbs chicken breast thinly sliced
  • 1 cup pineapple chunks
  • 1 red bell pepper sliced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil

Method
 

  1. Mix soy sauce, honey, and sesame oil together to make the sauce.
  2. Stir fry the sliced chicken in hot oil until golden, then remove and set aside.
  3. Sauté garlic, ginger, and red bell pepper for 2 minutes.
  4. Add pineapple chunks and the prepared sauce, then toss to coat.
  5. Return the chicken to the pan and stir fry for 2 more minutes until combined.

Notes

Store leftovers in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve with rice, noodles, or simple vegetables for an easy, comforting meal.
