Ingredients
  

  • 2 large cucumbers thinly sliced
  • 1 avocado ripe, diced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh dill chopped
  • 2 tbsp chives chopped
  • 2 tbsp parsley chopped
  • 1/4 small red onion thinly sliced
  • 1/2 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 clove garlic minced
  • 1 tsp honey
  • salt to taste
  • black pepper to taste

Method
 

  1. Whisk together Greek yogurt, mayonnaise, olive oil, lemon juice, minced garlic, honey, salt, and black pepper until smooth and creamy.
  2. Add sliced cucumbers, diced avocado, thinly sliced red onion, dill, chives, and parsley to a large bowl.
  3. Pour the dressing over the salad and gently toss until evenly coated.
  4. Fold in the crumbled feta carefully to avoid mashing the avocado.
  5. Chill for 10–15 minutes to allow the flavors to come together.
  6. Serve cold with extra herbs and cracked black pepper on top.

Notes

Store leftovers in the refrigerator for up to 3–4 days. Serve chilled alongside simple mains like grilled meats or warm bread for a balanced meal.
