Homemade Strawberry Ice Cream

Nothing beats a scoop of creamy strawberry ice cream packed with real berries and sweet summer flavor. With just a handful of simple ingredients and an ice cream maker, this homemade treat comes together in a way that feels easy and exciting from the very first stir.
Total Time 40 minutes

Ingredients

  • 1 1/2 cups strawberries hulled and diced
  • 2 Tbsp honey
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup half and half
  • 1 tsp vanilla extract

Method

  1. In a large bowl, mix strawberries, honey, sugar, and lemon juice together.
  2. Allow the strawberry mixture to sit for 15-20 minutes until the strawberries release their juices.
  3. Mash the strawberry mixture with a potato masher, fork, or pastry cutter until there are no large strawberry pieces remaining.
  4. For a smoother texture, blend the strawberries in a blender or food processor instead.
  5. Mix heavy whipping cream, half and half, and vanilla extract into the strawberry mixture until just combined.
  6. Pour the mixture into an ice cream maker.
  7. Churn the ice cream according to the manufacturer's instructions, about 15-20 minutes.
  8. Serve immediately for a soft-serve consistency or freeze in an airtight container for 3-4 hours for a firmer texture.
  9. Let the ice cream sit at room temperature for 5-10 minutes before serving for best texture.

Notes

Store the ice cream in an airtight container in the freezer for up to 3 months. Let it soften at room temperature for 5-10 minutes before scooping. Serve with pound cake, cookies, or fresh fruit for an easy homemade dessert.
