Ingredients
  

  • 2 boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 cups cooked jasmine or brown rice
  • 1 cup broccoli florets steamed
  • 1 cup shredded carrots
  • 1 avocado sliced
  • 1 cucumber sliced
  • 1 tbsp olive oil
  • sesame seeds for garnish
  • green onions sliced, for garnish
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 1 tsp cornstarch
  • 1 tbsp water for cornstarch slurry

Method
 

  1. Whisk together the honey, soy sauce, garlic, apple cider vinegar, and cornstarch slurry if using.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add chicken pieces and cook until fully cooked through.
  4. Pour sauce into the skillet with the chicken.
  5. Cook and stir until the sauce thickens and coats the chicken.
  6. Fill bowls with cooked rice.
  7. Arrange broccoli, carrots, cucumber, and avocado around the rice.
  8. Spoon chicken over the rice and drizzle extra sauce on top.
  9. Garnish with sesame seeds and sliced green onions.

Notes

Store leftovers in the fridge for up to 3–4 days, keeping components separate for best texture. Serve warm with rice and fresh vegetables for a balanced, satisfying meal.
