Ingredients
  

  • 1 medium red onion thinly sliced into half moons
  • 4 medium juicy tomatoes sliced into bite-sized pieces or wedges
  • 1 English cucumber partially peeled and sliced into half moons
  • 1 green bell pepper cored and sliced into rings
  • 1 handful pitted Kalamata olives
  • 1.5 teaspoons dried oregano divided
  • Kosher salt to taste
  • 0.25 cup extra virgin olive oil
  • 1-2 tablespoons red wine vinegar to taste
  • 7 ounce Greek feta cheese in brine torn into slabs

Method
 

  1. Fill a small bowl with ice water, add about 1 teaspoon of red wine vinegar, and soak the sliced onion for about 10 minutes.
  2. Place tomatoes, cucumber, bell pepper, and olives in a large serving dish.
  3. Drain the onion and add it to the serving dish with the vegetables.
  4. Sprinkle with 3/4 teaspoon oregano and a pinch of kosher salt.
  5. Add olive oil and red wine vinegar, then gently toss to combine.
  6. Top with feta slabs and sprinkle with remaining oregano before serving.

Notes

Store leftovers covered in the refrigerator for up to 2 days. Serve alongside grilled meats or crusty bread for a complete meal.
