Hummus (Chickpea and Tahini Dip)

Ingredients
  

  • 1.5 cups cooked chickpeas drained and rinsed
  • 0.33 cup smooth tahini
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice plus more to taste
  • 1 clove garlic
  • 0.5 teaspoon sea salt
  • 5 tablespoons water or as needed to blend
  • paprika for garnish
  • red pepper flakes for garnish
  • fresh parsley for garnish
  • warm pita bread for serving
  • veggies for serving

Method
 

  1. Place chickpeas, tahini, olive oil, lemon juice, garlic, and salt in a high-speed blender.
  2. Blend using a blender baton until the mixture begins to smooth out.
  3. Add water as needed to help blend and reach desired consistency.
  4. Continue blending until very smooth.
  5. Transfer to a serving plate.
  6. Garnish with paprika, red pepper flakes, and/or fresh parsley.
  7. Serve with warm pita bread and/or veggies.

Notes

Store leftovers in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve with warm pita bread or fresh vegetables for a simple and satisfying spread.
