Ingredients
  

  • 1 1/2 cups graham cracker crumbs about 12 full sheets, crushed
  • 1/3 cup granulated sugar
  • 6 Tablespoons butter melted
  • 2 14-ounce cans sweetened condensed milk
  • 4 ounces cream cheese softened
  • 3/4 cup key lime juice
  • 2 limes lime zest zest of 2 regular limes or 4 key limes
  • fresh whipped cream for topping, optional

Method
 

  1. Combine the graham cracker crumbs, granulated sugar, and melted butter, then press the mixture into an 8-inch square baking pan.
  2. Bake the crust at 350 degrees F for 10 minutes and allow it to cool.
  3. Beat the softened cream cheese in a mixing bowl with electric beaters until smooth.
  4. Add the sweetened condensed milk, key lime juice, and lime zest, then mix until smooth.
  5. Pour the filling over the cooled crust.
  6. Bake in the preheated oven for 10 minutes.
  7. Allow the bars to cool for about 30 minutes.
  8. Refrigerate for at least 3 hours before serving.
  9. Top with fresh whipped cream if desired and serve.

Notes

Store covered in the refrigerator for up to 3 days or freeze for up to 3 months. Serve chilled with a dollop of fresh whipped cream or alongside fresh fruit for an easy dessert.
