Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 16 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 lemon zest from 1 lemon
  • 2 tbsp fresh lemon juice
  • 1 1/2 cups fresh blueberries
  • lemon slices for garnish
  • extra blueberries for garnish

Method
 

  1. Mix graham cracker crumbs with melted butter until well combined.
  2. Press the mixture firmly into an 8x8-inch pan and chill while preparing the filling.
  3. Beat cream cheese, powdered sugar, vanilla extract, lemon zest, and lemon juice until smooth and creamy.
  4. Whip heavy cream until stiff peaks form.
  5. Gently fold whipped cream into the cream cheese mixture.
  6. Fold in fresh blueberries carefully to avoid crushing them.
  7. Spread the filling evenly over the chilled crust and smooth the top.
  8. Decorate with extra blueberries, lemon slices, and additional lemon zest if desired.
  9. Refrigerate for 4–6 hours or overnight until firm, then slice into squares and serve chilled.

Notes

Store leftovers covered in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve chilled with fresh fruit or a warm cup of coffee for a simple and satisfying dessert.
