Ingredients
  

  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup butter melted
  • 1/2 cup milk
  • 1 lemon zested and juiced
  • 1 cup blueberries
  • 1 tsp baking powder

Method
 

  1. Mix the eggs, melted butter, milk, and lemon zest and juice in a bowl until combined.
  2. Add the flour, sugar, and baking powder to the wet mixture and stir until smooth.
  3. Fold in the blueberries gently until evenly distributed.
  4. Pour the batter into a loaf pan and spread evenly.
  5. Bake until the loaf is set and lightly golden, then cool before slicing.

Notes

Store the bread in the refrigerator for up to 3–4 days or freeze for up to 3 months. Serve slices with fresh fruit, yogurt, or a warm cup of coffee or tea.
