Lemon Posset

Rich, silky, and bursting with bright lemon flavor, Lemon Posset is one of those desserts that feels fancy while being wonderfully simple to make. With just a handful of ingredients and a straightforward method, it comes together with very little fuss.

Ingredients
  

  • 2 cups heavy cream
  • 2/3 cup granulated sugar
  • 1/3 cup fresh lemon juice
  • 1/4 teaspoon vanilla extract
  • fresh berries for serving
  • fresh mint leaves for serving

Method
 

  1. Heat the heavy cream and granulated sugar in a medium saucepan over medium-high heat. Stir until the sugar dissolves and bring to a boil.
  2. Reduce the heat to maintain a steady boil for 5 minutes, adjusting as needed to prevent boiling over.
  3. Remove from the heat and stir in the fresh lemon juice and vanilla extract.
  4. Let the mixture cool for 15 minutes.
  5. Stir the mixture and evenly divide it among eight small ramekins or hollowed-out lemon halves.
  6. Refrigerate for 2 hours, or until set.
  7. Garnish with fresh berries and mint leaves before serving.

Notes

Store covered in the refrigerator for up to 3–4 days. Serve chilled and garnish with fresh berries and mint just before serving. Pairs well with fresh fruit, coffee, or sparkling beverages.
