Method
- Combine the water and sugar in a small heavy saucepan.
- Bring the mixture to a boil over medium-high heat, stirring occasionally, until the sugar dissolves and the syrup is clear, about 1 minute.
- Remove the syrup from the heat and add the lemon zest.
- Let the zest steep in the syrup for about 20 minutes.
- Whisk the lemon juice into the syrup mixture.
- Cover and refrigerate the mixture until chilled, about 2-3 hours.
- Pour the chilled mixture into an ice cream maker.
- Freeze according to the manufacturer’s instructions.
- Transfer the sorbet to a freezer-safe container.
- Freeze the sorbet until firm, at least 3 hours or up to 3 days, before serving.
