Ingredients
  

  • 2 sleeves graham crackers
  • 2 cups ripe mango diced
  • 1/2 cup mango purée
  • 8 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • lime zest zest of 1 lime
  • 3 tbsp fresh lime juice
  • extra mango for topping
  • lime zest for topping

Method
 

  1. Beat the cream cheese, powdered sugar, vanilla extract, lime zest, and fresh lime juice until smooth.
  2. Whip the heavy cream to stiff peaks in a separate bowl.
  3. Gently fold the whipped cream into the cream cheese mixture.
  4. Fold in the mango purée until fully combined.
  5. Spread a thin layer of cream in the bottom of a dish.
  6. Add a layer of graham crackers, then cream, then diced mango.
  7. Repeat the layers until all ingredients are used, finishing with cream on top.
  8. Top with extra mango and lime zest, then refrigerate for 6 hours or overnight until soft and sliceable.

Notes

Store covered in the refrigerator for up to 3–4 days. Serve chilled with fresh fruit or a warm drink for a simple, refreshing dessert.
