Ingredients
  

  • 12 oz rotini or bowtie pasta cooked and cooled
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup Kalamata olives sliced
  • 1/4 cup red onion thinly sliced
  • 1/2 cup roasted red peppers chopped
  • 2 tbsp fresh parsley chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • salt to taste
  • freshly cracked black pepper to taste

Method
 

  1. Cook the pasta until al dente.
  2. Rinse the pasta under cold water.
  3. Drain the pasta well.
  4. Add the cooled pasta, cherry tomatoes, cucumber, feta cheese, olives, red onion, roasted red peppers, and parsley to a large mixing bowl.
  5. Whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, oregano, salt, and black pepper.
  6. Pour the dressing over the pasta salad.
  7. Toss gently until evenly coated.
  8. Cover and refrigerate for 20–30 minutes.
  9. Toss again before serving.
  10. Sprinkle extra feta and parsley on top before serving.

Notes

Store leftovers in the refrigerator for up to 3–4 days and toss before serving again. Serve chilled alongside grilled meats, simple salads, or warm bread for a complete meal.
