Method
- Preheat the oven to 375°F.
- Spray a 2.5-3 QT. oven-safe baking dish with non-stick baking spray.
- Quarter large strawberries.
- Combine the berries, sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and salt in a large bowl and stir gently.
- Pour the berry filling into the prepared baking dish in an even layer.
- Mix the flour, sugar, baking powder, and salt together in a mixing bowl.
- Cut the cold butter into the flour mixture until the butter pieces are the size of peas.
- Slowly stream in the cold buttermilk and stir until the dry ingredients are moistened.
- Scoop the biscuit dough over the berry mixture using a cookie scoop.
- Brush the tops with cold buttermilk and sprinkle with coarse sugar.
- Bake for 40-45 minutes or until the tops are golden amber brown and the juices along the edges are bubbling.
- Allow the cobbler to cool for 10-20 minutes before serving.
- Serve with vanilla ice cream or whipped cream.
Notes
