Mixed Berry Cobbler

Nothing beats a warm scoop of Mixed Berry Cobbler with bubbling fruit and a buttery biscuit topping fresh from the oven. It’s the kind of homemade dessert that looks impressive but comes together with simple pantry staples and a big bowl of fresh berries.

Ingredients
  

  • 7-8 cups mixed berries fresh strawberries, blackberries, raspberries and blueberries
  • 2/3 cup sugar or less if preferred
  • 3 Tbsp. cornstarch
  • 2 Tbsp. freshly squeezed lemon juice
  • 1 tsp. vanilla extract
  • pinch of cinnamon
  • pinch of salt
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 5 Tbsp. unsalted butter cold, cubed
  • 2/3 cup buttermilk cold
  • 1 Tbsp. cold buttermilk for topping before baking
  • coarse sugar for topping before baking

Method
 

  1. Preheat the oven to 375°F.
  2. Spray a 2.5-3 QT. oven-safe baking dish with non-stick baking spray.
  3. Quarter large strawberries.
  4. Combine the berries, sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and salt in a large bowl and stir gently.
  5. Pour the berry filling into the prepared baking dish in an even layer.
  6. Mix the flour, sugar, baking powder, and salt together in a mixing bowl.
  7. Cut the cold butter into the flour mixture until the butter pieces are the size of peas.
  8. Slowly stream in the cold buttermilk and stir until the dry ingredients are moistened.
  9. Scoop the biscuit dough over the berry mixture using a cookie scoop.
  10. Brush the tops with cold buttermilk and sprinkle with coarse sugar.
  11. Bake for 40-45 minutes or until the tops are golden amber brown and the juices along the edges are bubbling.
  12. Allow the cobbler to cool for 10-20 minutes before serving.
  13. Serve with vanilla ice cream or whipped cream.

Notes

Store leftover cobbler in an airtight container in the refrigerator for up to 3 days. Serve warm with vanilla ice cream or whipped cream for a comforting dessert.
