Ingredients
  

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped topping
  • 2 cups peaches diced, fresh or canned, drained
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch
  • 2 tbsp water

Method
 

  1. Mix graham cracker crumbs with melted butter and press into a pie dish.
  2. Chill the crust for 15 minutes.
  3. Cook diced peaches with brown sugar and cinnamon in a pan until soft.
  4. Stir in cornstarch mixed with water and cook until thickened.
  5. Let the peach mixture cool completely.
  6. Beat cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Fold in whipped topping.
  8. Spread the cheesecake mixture into the chilled crust.
  9. Spoon the cooled peach mixture over the top.
  10. Chill the pie for 3 to 4 hours until set.

Notes

Store the pie covered in the refrigerator for up to 3–4 days or freeze for up to 3 months and thaw before serving. Serve chilled with simple sides like fresh fruit or coffee for a balanced, comforting dessert.
