Ingredients
  

  • 2 sleeves graham crackers
  • 2 cups peaches diced, fresh or canned
  • 1/2 cup peach preserves
  • 1 tsp cinnamon
  • 8 oz cream cheese softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup crushed cookies or graham crumbs for topping

Method
 

  1. Beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
  2. Whip the heavy cream to stiff peaks in a separate bowl.
  3. Gently fold the whipped cream into the cream cheese mixture until combined.
  4. Toss the diced peaches with cinnamon and a spoonful of peach preserves.
  5. Spread a thin layer of cream in the bottom of a dish.
  6. Layer graham crackers over the cream, then add cream and peaches.
  7. Repeat the layers until all ingredients are used, finishing with cream on top.
  8. Sprinkle crushed cookies over the top.
  9. Refrigerate for 6 hours or overnight until soft and cake-like.

Notes

Store covered in the refrigerator for up to 3–4 days or freeze for longer storage. Serve chilled with simple sides like fresh fruit or a hot cup of coffee.
